GREEK PASTA SALAD
  • Ingredients
  • 1 full load of pasta dough made into rotini OR
  • short fusilli
  • 1/2 cup finely chopped red onion
  • 1 cup ripe olives, chopped
  • 2 cups crumbled feta cheese
  • 1/4 cup finely chopped green bell pepper
  • 2 small tomatoes, chopped
  • 3/4 cup olive or vegetable oil
  • 6 tablespoons red wine vinegar
  • 1-1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon sugar
  • 2 teaspoons Dijon-style mustard
Directions
  1. Make rotini and cook until al dente
  2. Then drain, rinse thoroughly in cold water and set aside to cool
  3. When pasta has cooled slightly add the onion, olives, feta cheese, green pepper, and tomatoes
  4. In a small bowl, whisk together the remaining ingredients to make dressing
  5. Pour dressing over the pasta and toss gently
  6. Refrigerate until ready to serve.
