CARAMELIZED APPLE-CINNAMON NOODLE PUDDING
  • Ingredients
  • 1 half load of pasta dough made into macaroni
  • 2 tablespoons butter or margarine
  • 2 cups apples cut into 1/4 to 1/2-inch pieces
  • 2 tablespoons light brown sugar
  • 2 tablespoons golden raisins
  • 1/4 teaspoon ground cinnamon
  • 1 cup small curd creamed cottage cheese
  • 1/2 cup sugar
  • 3 eggs
  • 2 cups milk, scalded
  • 1 teaspoon vanilla extract
  • pinch of nutmeg
Directions
  1. Make macaroni, cook until al dente, drain and set aside
  2. Heat butter in medium skillet and stir in the apples and sprinkle with brown sugar
  3. Saute, stirring, until apples are glazed and slightly caramelized
  4. Stir in raisins and cinnamon
  5. Beat the cottage cheese and the sugar until fairly smooth
  6. Beat in the eggs, one at a time, beating well after each addition
  7. Stir in the milk and the vanilla
  8. Heat oven to 350F
  9. Lightly butter a 2-quart shallow baking dish
  10. Fold the macaroni and the apples together and spread in bottom of the baking dish
  11. Carefully pour in the custard mixture
  12. Sprinkle top with nutmeg
  13. Set the dish in a larger baking pan and add 1 inch of hot water
  14. Bake until set, about 55 minutes.
