APPLE LASAGNE
  • Ingredients
  • 1 half load of pasta dough made into lasagne
  • 1-1/4 cups milk
  • 1 egg
  • 1 egg yolk
  • 1 tablespoon cornstarch
  • 1 tablespoon powdered sugar
  • 1-3/4 pounds cooking apples
  • 2 tablespoons butter
  • 1/3 cup powdered sugar
  • 1/4 cup raisins
  • 1/2 teaspoon apple pie spice
  • 1/4 cup walnuts, finely chopped
  • powdered sugar, if desired
  • whipped cream, if desired
Directions
  1. Make lasagne, cook al dente, drain, rinse and set aside
  2. In a medium-size saucepan, heat milk
  3. In a medium-size bowl, mix together egg, egg yolk, cornstarch and 1 tablespoon powdered sugar
  4. Pour hot milk into egg mixture while stirring
  5. Return to saucepan
  6. Cook over medium-low heat, stirring constantly, until thickened
  7. Set aside
  8. Peel, core and slice apples
  9. Put into a medium saucepan with butter, 1/3 cup powdered sugar and a little water
  10. Cook 10 minutes or until apples are soft
  11. Stir in raisins and apple pie spice
  12. Preheat oven to 375F
  13. In a buttered baking dish, layer lasagne and apple mixture, ending with an apple layer
  14. Pour custard over apples
  15. Sprinkle with walnuts
  16. Bake 25 minutes or until set
  17. Decorate with powdered sugar and serve with a dollop of whipped cream, if desired.
