Yakitori Marinade
  • Ingredients
  • 1/2 cup soy sauce (dark, if available)
  • 1/2 cup dry Sherry
  • 2 tablespoons sugar
  • 1 tablespoon minced fresh ginger
  • 1 clove garlic, minced
  • 1 /4 teaspoon salt
Directions
  1. Place soy sauce, Sherry, sugar, ginger, garlic and salt in a saucepan
  2. Bring to a boil over medium high heat and simmer until sugar is dissolved
  3. Let marinade cool completely. Yield: 1 cup SUGGESTED USE: Dark soy sauce, available in Asian grocery stores and some supermarkets, is very thick and dark in color, but contains very little salt
  4. Yakitori is a traditional style of kabob
  5. It is usually made with chicken cut into 1-1/2 inch cubes skewered along with green onions and sometimes even waterchestnuts
  6. Marinate your chicken (30 to 60 minutes) and soak the bamboo skewers in water at the same time.
