Directions
  1. Knobby root with a beige color
  2. When young, the skin is thin and the flesh zesty and tender
  3. Older ginger root which is tough, wrinkled, and softened is not worth buying
  4. The flavor is slightly lemony and slightly hot-but large quantities of fresh ginger root have to be used before a hot flavor is imparted to a dish.
