Maple Bacon Sausage
  • Ingredients
  • 1/2 pound maple flavored bacon
  • 1-1/2 pounds ground pork
  • 2 tablespoons real maple syrup
  • 2 tablespoons dark brown sugar
  • 1/2 teaspoon dry mustard
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons cold water
Directions
  1. Cut the bacon crosswise into one-inch pieces
  2. Finely grind in a food processor
  3. Add the bacon, pork and remaining ingredients to the mixing bin and process until thoroughly blended
  4. Using the #20 horn extrude the mixture into the casings and twist off into four-inch links
  5. Poke several holes down the length of each sausage
  6. Refrigerate and use within three to four days or freeze for later use.
