Ham Loaf Sausage
Ingredients
1-1/2 pounds ground or finely chopped cooked ham
1/2 pound ground pork
3 shallots, minced
1 egg, beaten
1/4 cup fresh minced parsley
2 tablespoons light brown sugar
1 teaspoon dried thyme
1/2 teaspoon dry mustard
1/2 teaspoon ground nutmeg
1/2 cup milk
Directions
Add meats and remaining ingredients to the mixing bin and process until thoroughly blended
Using the #26 horn extrude the mixture into the casings and twist off into four- inch links
Poke several holes down the length of each sausage
Refrigerate and use within three to four days or freeze for later use.
