French Garlic Sausages
  • Ingredients
  • 2 pounds ground pork
  • 10 cloves garlic, minced
  • 1 tablespoon sugar
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Pinch dried basil
  • Pinch dried savory or parsley
  • One pinch each of dried sage, dried thyme,
  • ground cloves, ground mace,
  • ground nutmeg, ground cinnamon,
  • and cayenne pepper
  • 2 teaspoons salt
  • 1 teaspoon freshly ground black pepper
  • 1/4 cup brandy
Directions
  1. Add the pork and remaining ingredients to the mixing bin and process until thoroughly blended
  2. Using the #26 horn extrude the mixture into the casings and twist off into four- inch links
  3. Poke several holes down the length of each sausage
  4. Refrigerate, uncovered, on a rack for 12 to 24 hours before grilling
  5. They keep, covered, in the refrigerator another two days before cooking or freeze for later use.
