French Garlic Sausages
Ingredients
2 pounds ground pork
10 cloves garlic, minced
1 tablespoon sugar
1/2 teaspoon paprika
1/2 teaspoon dried oregano
Pinch dried basil
Pinch dried savory or parsley
One pinch each of dried sage, dried thyme,
ground cloves, ground mace,
ground nutmeg, ground cinnamon,
and cayenne pepper
2 teaspoons salt
1 teaspoon freshly ground black pepper
1/4 cup brandy
Directions
Add the pork and remaining ingredients to the mixing bin and process until thoroughly blended
Using the #26 horn extrude the mixture into the casings and twist off into four- inch links
Poke several holes down the length of each sausage
Refrigerate, uncovered, on a rack for 12 to 24 hours before grilling
They keep, covered, in the refrigerator another two days before cooking or freeze for later use.
