Roasted Red Pepper Pork Sausage
Ingredients
2 pounds ground pork
1/2 cup diced roasted red pepper
1/4 cup freshly grated Parmesan cheese
1 clove garlic, minced
2 tablespoons chopped fresh basil leaves
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 tablespoons cold water or white wine
Directions
Add veal and remaining ingredients to the mixing bin and process until thoroughly blended
Using the #26 or #29 horn extrude the mixture into the casings and twist off into four- inch links
Poke several holes down the length of each sausage
Refrigerate and use within three to four days or freeze for later use.
