Buffalo Sausage
Buffalo Sausage
Ingredients
1 cup fresh bread crumbs
1/2 cup milk
1-1/2 pounds ground buffalo
1/2 cup chopped onions
2 cloves garlic, minced
2 tablespoons ketchup
1 tablespoon steak sauce
1 teaspoon dry mustard
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
Directions
Soak the bread crumbs in milk for 10 minutes
Add the bread crumb mixture, ground buffalo meat and remaining ingredients to the mixing bin and process until thoroughly blended
Using the #26 or #29 horn extrude the mixture into the casings and twist off into four to six-inch links
Poke several holes down the length of each sausage
Refrigerate and use within three to four days or freeze for later use.
