Tropical Fruit Marinade
  • Ingredients
  • 1 mango, peeled and cubed
  • 1/2 cup fresh orange juice
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • 1/4 teaspoon dried thyme
Directions
  1. Place mango cubes, orange juice and lemon juice in the blender or food processor and puree
  2. Transfer to a bowl and whisk in the olive oil and thyme. Yield: 1-1/2 cups SUGGESTED USE: Many supermarkets now carry frozen mango chunks
  3. These may be used in place of the fresh mango
  4. Simply thaw and use about 1 cup mango
  5. Try this delicious marinade on boneless chicken breasts (2 to 3 hours), firm fish fillets (30 to 60 minutes), shrimp (1 to 3 hours) or pork tenderloin ( 3 to 4 hours).
