Place mango cubes, orange juice and lemon juice in the
blender or food processor and puree
Transfer to a bowl
and whisk in the olive oil and thyme.
Yield: 1-1/2 cups
SUGGESTED USE: Many supermarkets now carry frozen
mango chunks
These may be used in place of the fresh
mango
Simply thaw and use about 1 cup mango
