Place tequila, triple sec, lime juice and vegetable oil in a
medium bowl
Whisk to combine
Stir in the jalapeno,
lime zest, chili powder, sugar and salt
Let stand 15
minutes before using as a marinade.
Yield: 3/4 cup
SUGGESTED USE: With the zing of a real Margarita this
marinade is delicious on shrimp or scallops (30 to 60
minutes) or boneless chicken breasts (1 to 3 hours) or
chicken pieces (3 to 4 hours).
