Ckicken and Ham Sausage with Horseradish
  • Ingredients
  • 1 pound ground chicken
  • 3/4 pound ham, finely ground
  • 1 egg, beaten
  • 1/2 cup diced celery
  • 1/4 cup chopped onion
  • 2 tablespoons minced fresh parsley
  • 1/4 cup chopped pimiento stuffed olives
  • 1 tablespoon prepared horseradish
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons cold water
Directions
  1. Add the chicken, ham and remaining ingredients to the mixing bin and process until thoroughly blended
  2. Using the #26 horn extrude the mixture into the casings and twist off into four- inch links
  3. Poke several holes down the length of each sausage
  4. Refrigerate and use within three to four days or freeze for later use.
