Thai Green Curry Chicken and Turkey Sausage
  • Ingredients
  • 1 pound ground turkey
  • 1 pound ground chicken
  • 2 cloves garlic, minced
  • 1 teaspoon minced fresh ginger
  • 1/4 cup minced fresh cilantro
  • 1 tablespoon minced fresh basil
  • 1 tablespoon minced fresh mint
  • 1 tablespoon Thai green curry paste
  • 1-1/2 tablespoons Asian fish sauce
  • 1/4 teaspoon crushed red pepper flakes
  • 1 teaspoon salt
  • 1 teaspoon freshly ground white pepper
  • 2 tablespoons cold water
Directions
  1. Add the turkey, chicken and remaining ingredients to the mixing bin and process until thoroughly blended
  2. Using the #26 horn extrude the mixture into the casings and twist off into four-inch links
  3. Poke several holes down the length of each sausage
  4. Refrigerate and use within three to four days or freeze for later use.
