Southwest Green Chili Poultry Sausage
Ingredients
1 pound ground turkey
1 pound ground chicken
1-4 oz. can diced green chilies
1/4 cup chopped fresh cilantro
1 teaspoon minced jalapeno chili
2 tablespoons pure New Mexican ground chili
1-1/2 teaspoons ground cumin
1/4 teaspoon cayenne pepper
Pinch cinnamon
2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1/4 cup beer
Directions
Add chicken, turkey and remaining ingredients to the mixing bin and process until thoroughly blended
Using the #26 horn extrude the mixture into the casings and twist off into four- inch links
Poke several holes down the length of each sausage
Refrigerate and use within three to four days or freeze for later use.
