Chinese Roasted Duck Sausage
Chinese Roasted Duck Sausage
Ingredients
One 3-pound roasted duckling, meat and skin
removed and coarsely ground
1 slice bacon, ground with duck
3/4 pound ground chicken
2 tablespoons minced fresh cilantro
2 tablespoons minced green onions
2 tablespoons minced waterchestnuts
1 tablespoon minced garlic
1 tablespoon Hoisin Sauce*
2 teaspoons sugar
1 teaspoon Oyster sauce*
Pinch cayenne pepper
1/2 teaspoon salt
Directions
Add the ground duck, bacon, and chicken and remaining ingredients to the mixing bin and process until thoroughly blended
Using the #26 horn extrude the mixture into the casings and twist off into four-inch links
Poke several holes down the length of each sausage
Refrigerate and use within three to four days or freeze for later use
