Oyster Sausages
  • Ingredients
  • 2 cups chopped raw oysters
  • 1 pound ground veal
  • 1/4 teaspoon freshly grated nutmeg
  • 2 teaspoons salt
  • 1 teaspoon freshly ground white pepper
  • 1/2 cup plain dry bread crumbs
Directions
  1. Cut the oysters into small pieces and place in a food processor
  2. Process as finely as possible
  3. Add the oysters, veal and remaining ingredients to the mixing bin and process until thoroughly blended
  4. Using the #20 horn extrude the mixture into the casings and twist off into four- inch links
  5. Poke several holes down the length of each sausage
  6. Refrigerate and use within three to four days or freeze for later use.
