Five-Pepper corn Turkey Sausage
Ingredients
2 pounds ground turkey
3 tablespoons minced shallots
2 tablespoons minced fresh parsley
2 teaspoons salt
1 tablespoon freshly ground
5-peppercorn blend
1/3 cup dry white wine
Directions
Add the turkey and remaining ingredients to the mixing bin and process until thoroughly blended
Using the #20 horn extrude the mixture into the casings and twist off into four- inch links
Poke several holes down the length of each sausage
Refrigerate and use within three to four days or freeze for later use.
