Apple Chicken Sausage
  • Ingredients
  • 3/4 cup apple cider or juice
  • 2 pounds ground chicken
  • 2 ounces dried apples, chopped
  • 1-1/2 teaspoons dried sage
  • 1/8 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground ginger
  • 2 teaspoons salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 chicken bouillon cube dissolved in 2
  • tablespoons boiling water
Directions
  1. In a small saucepan, boil down the cider almost to a syrup, about 1 to 2 tablespoons
  2. Cool and reserve. Add the apple cider and the remaining ingredients to the ground chicken in the mixing bin and process until thoroughly blended
  3. Using the #26 horn extrude the mixture into the casings and twist off into six-inch links
  4. Poke several holes down the length of each sausage
  5. Refrigerate and use within three to four days or freeze for later use.
