Fresh Tarragon Smoked Chicken Sausage
Fresh Tarragon Smoked Chicken Sausage
Ingredients
1-1/2 pounds ground chicken
1/2 pound smoked chicken or turkey, diced in 1/4 inch pieces
1 egg, beaten
2 tablespoons minced shallots
3 tablespoons chopped fresh tarragon
2 tablespoons chopped fresh parsley
1/4 teaspoon ground ginger
2 teaspoons salt
1/2 teaspoon freshly ground white pepper
1/4 cup Madeira wine
2 tablespoons cream
Directions
Add chicken, smoked chicken or turkey and remaining ingredients to the mixing bin and process until thoroughly blended
Using the #26 horn extrude the mixture into the casings and twist off into four-inch links
Poke several holes down the length of each sausage
Refrigerate and use within three to four days or freeze for later use.
