Sausage, Chicken Livers and Eggs
  • Ingredients
  • 1/2 pound chutney raisin sausage (page 89)
  • 1 tablespoon butter
  • 1/2 pound fresh chicken livers, rinsed, dried,
  • and coarsely chopped
  • 1 tablespoon chopped fresh chives
  • 8 eggs, well beaten
  • salt and freshly ground black pepper to taste
Directions
  1. Saute the sausage until it is brown, about ten minutes
  2. Remove it with a slotted spoon, cut into bite-sized pieces and set aside
  3. Discard the drippings
  4. Add the butter to the skillet and saute the chopped chicken livers four or five minutes
  5. Return the sausage to the skillet
  6. Add chives and eggs, add salt and pepper to taste
  7. Stir constantly over medium heat until the eggs are fluffy and well scrambled. Serves 4.
