Crepes
  • Ingredients
  • 1 cup cold water
  • 1 cup cold milk
  • 4 eggs
  • 1/2 teaspoon salt
  • 2 cups all-purpose flour
  • 4 tablespoons butter, melted
Directions
  1. Put all ingredients in a blender in the order listed
  2. Whirl 1 minute
  3. Scrape down sides and blend another minute
  4. Refrigerate batter at least 2 hours
  5. Heat a 7-inch crepe pan or iron skillet over medium-high heat until very hot
  6. Pour in a scant 1/4 cup batter
  7. Tilt pan in all directions so batter runs evenly over bottom
  8. Pour out any excess batter
  9. Return pan to heat for 1 minute. Turn crepe when bottom is lightly browned. Cook 30 seconds on second side
  10. Slide out of pan onto waxed paper
  11. Repeat with remaining batter. Makes 16 crepes.
