Potato Sausage Casserole
  • Ingredients
  • 1 pound loose fresh sage
  • breakfast sausage (page 26)
  • 5 medium-sized potatoes
  • 1 small onion chopped
  • 1/4 teaspoon oregano
  • salt to taste freshly ground black pepper
Directions
  1. The sausage should be precooked in about 1/2 cupful of water for about fifteen minutes
  2. Break the sausage with a fork as it cooks
  3. Drain off excess fat
  4. Combine all the other ingredients with the sausage and turn into a 1-1/2 quart casserole
  5. Cover and bake in a 325?F
  6. oven about one hour, or until the potatoes are tender.
