Quick, Easy Sausage Stew
  • Ingredients
  • 2 pounds spicy Sicilian sausage, browned
  • and sliced into 2-inch pieces (page 29)
  • 4-5 potatoes
  • 1 or 2 16-ounce cans kidney beans
  • (red or white)
  • salt to taste
  • freshly ground black pepper
Directions
  1. Boil the potatoes and sausage in 1 quart of water until potatoes are soft
  2. Add beans, salt and pepper to taste, heat through and serve.
