Pennsylvania Dutch Sausage Pie
  • Ingredients
  • 1-1/2 pounds potatoes cut into chunks
  • 1 pie crust dough recipe for covered pie
  • 12 to 14 1-inch lengths of Italian
  • citrus cheese sausage (page 31)
  • fresh parsley
  • freshly ground black pepper
Directions
  1. In salted water, boil the potatoes until almost tender
  2. Saute sausage lightly in a small skillet and set aside
  3. While the potatoes are cooking take some pie crust dough and line a pie tin with it, reserving some of the dough for the topping
  4. Place sausage lengths into the pie
  5. Sprinkle with parsley and a small pinch of freshly ground black pepper
  6. Layer the potatoes over the sausage
  7. Sprinkle a few drops of water over the mixture before the lid of crust is set on
  8. Bake in 450F
  9. oven for 20 minutes.
