Creole Sausage Stew
  • Ingredients
  • 1 pound spicy Creole sausage
  • 1 cup chopped onions
  • 1/2 cup chopped green peppers
  • 2 tablespoons flour
  • 1 29-ounce can tomatoes
  • 2 cups cooked or canned whole kernel corn
  • 1 bay leaf
  • 1/2 teaspoon thyme
  • 1-1/4 teaspoons salt
  • Dash Tabasco
Directions
  1. Cut each sausage crosswise into 4 pieces; cook until browned in a large skillet
  2. Remove the sausages
  3. Drain all but 2 tablespoons of fat
  4. To the fat remaining add the onions and green peppers; saute 5 minutes
  5. Blend in the flour
  6. Add the tomatoes, corn, bay leaf, thyme, salt, and Tabasco
  7. Cook over low heat 20 minutes
  8. Return the sausages to skillet and cook 5 minutes longer.
