Kielbasa with Green Beans and Carrots
  • Ingredients
  • 1 pound homemade kielbasa, cut
  • into one-inch pieces
  • 1 small onion, sliced thinly
  • 1 cup dry white wine
  • 2 cups water
  • 2 cups Italian (Romano) green beans,
  • cut into one-inch pieces
  • 2 cups carrots, scraped and sliced
  • 1 bay leaf
  • 2 tablespoons chopped parsley
  • 1 teaspoon paprika
  • salt and freshly ground black pepper
Directions
  1. Put the kielbasa into a heavy pot with just enough water to cover the bottom
  2. Cook over medium heat until the sausage gives up some of its grease and is lightly browned, about ten minutes
  3. Add the onion and cook about five minutes or until the onion is translucent
  4. Add the remaining ingredients and cook for about forty minutes or until the vegetables are tender
  5. Remove the bay leaf
  6. Serve in bowls.
