Koru Ragu (Swedish Sausage Stew)
Ingredients
1-1/2 pounds old fashioned pork
sausage (page 25)
3 tablespoons butter
1/2 cup chopped onions
1 tablespoon flour
1 cup beef broth
1 pound potatoes, peeled and cubed
2 cups sliced carrots
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 bay leaf
Directions
Lightly brown the sausage in a heavy saucepan
Remove and reserve
Pour off the fat
Melt the butter in the saucepan; saute the onions 5 minutes
Blend in the flour, then stir in the broth until the mixture boils
Add the sausages, potatoes, carrots, salt, pepper, and bay leaf
Bring to a boil, cover, and cook over low heat 20 minutes.
