Walnut and Sausage Cake
  • Ingredients
  • 1 pound bourbon and brown sugar pork
  • sausage, removed from casing
  • 1 cup seedless raisins
  • 1 pint boiling water
  • 1 pound brown sugar
  • 1 cup molasses
  • 1 teaspoon cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon baking powder
  • 1 cup shelled English walnuts
  • 4 cups all-purpose flour
Directions
  1. Combine sausage and raisins
  2. Pour boiling water over mixture and add brown sugar and molasses
  3. Dissolve cinnamon, ground cloves and baking powder in 1-2 tablespoons hot water then add to mixture
  4. Add walnuts
  5. Gradually add flour (add 1 tablespoonful of flour if mixture is not holding together well). Mix well and pour into a tube pan
  6. Bake in 250F oven for 1-1/2 hours
  7. While cake is baking prepare icing
  8. Ice cake while still hot and set aside to cool.
