Guacamole Dip with Chorizo
  • Ingredients
  • 1/2 pound Mexican chorizo sausage cut into
  • Small bite-sized pieces (page 37)
  • 2 large, ripe avocados
  • 1 medium tomato, cored, peeled, seeded,
  • and finely diced
  • 2 cloves garlic, finely minced
  • 1/2 cup mayonnaise
  • dash hot pepper sauce
  • 1 teaspoon lemon juice
  • salt
  • freshly ground black pepper
Directions
  1. Saute the sausages lightly about twenty minutes
  2. Peel the avocado and cut it in half to remove the pit
  3. Mash the avocado in a bowl, using the back of a fork
  4. A food processor would simplify things here
  5. Mash or process the avocados until you get a smooth, pureed consistency
  6. Core, peel, seed, and chop the tomato
  7. Add it to the bowl with the avocado
  8. Mix in the chorizo sausage, garlic, mayonnaise, lemon juice, hot pepper sauce, salt, and pepper
  9. Serve chilled with corn chips
