Ingredients
1/2 pound fresh calabrese salami,
thinly sliced (page 30)
Dijon-style mustard
chopped parsley
carrots cut into short julienne strips
celery cut into short julienne strips
Directions
Lightly broil salami slices until they are thoroughly cooked
Spread each slice with a coating of mustard, sprinkle with parsley and place several strips of carrot and celery on top of each
Arrange on a platter and serve.
