Caribbean Rum-Lime Marinade
Caribbean Rum-Lime Marinade
Ingredients
1/2 cup fresh lime juice
1/4 cup dark Rum
2 tablespoons vegetable oil
2 cloves garlic, minced
1/4 teaspoon ground allspice Pinch red pepper flakes
Directions
Place the lime juice and Rum in a medium mixing bowl
Whisk in the vegetable oil, garlic, allspice and red pepper flakes. Yield: 2/3 cup SUGGESTED USE: Be sure to use Myer's Rum for this marinade
Other varieties are too mild and lack the flavor for this recipe
Try this marinade on pork tenderloin (2 to 3 hours), pork or chicken kabobs (2 hours) or jumbo shrimp (1 to 2 hours).
