Sausage and Vegetable Curry
  • Ingredients
  • 3 tablespoons peanut oil
  • 2 pounds French garlic sausage
  • cut into one-inch pieces
  • 1 small onion, chopped
  • 1 carrot, scraped and thinly sliced
  • 4 cups fresh Romano green beans, cut
  • into one-inch pieces
  • 1 teaspoon red pepper flakes
  • 2 teaspoons (or to taste) curry powder (or
  • your own blend of coriander, turmeric,
  • cumin, mace, and pepper)
  • Buttered rice
Directions
  1. Heat the oil in a large skillet and brown the sausage pieces
  2. Add the onion and carrot and saute until the carrot is crisp-tender
  3. Add the beans, red pepper, and curry powder, stirring over medium high heat, about ten minutes or until the beans are crisp-tender
  4. Serve over hot buttered rice.
