Sausage and Vegetable Curry
Ingredients
3 tablespoons peanut oil
2 pounds French garlic sausage
cut into one-inch pieces
1 small onion, chopped
1 carrot, scraped and thinly sliced
4 cups fresh Romano green beans, cut
into one-inch pieces
1 teaspoon red pepper flakes
2 teaspoons (or to taste) curry powder (or
your own blend of coriander, turmeric,
cumin, mace, and pepper)
Buttered rice
Directions
Heat the oil in a large skillet and brown the sausage pieces
Add the onion and carrot and saute until the carrot is crisp-tender
Add the beans, red pepper, and curry powder, stirring over medium high heat, about ten minutes or until the beans are crisp-tender
Serve over hot buttered rice.
