Potato Salad and Sausage
  • Ingredients
  • 1/2 pound triple mustard pork sausage,
  • browned and cut into
  • small pieces (page 39)
  • 2 cups chopped cooked potatoes
  • 1 pickled beet, finely diced
  • 1 teaspoon parsley
  • 1 small onion, grated
  • mayonnaise
Directions
  1. Combine the sausage, potatoes, beet, parsley and onion
  2. This should be mixed with mayonnaise to taste and served on lettuce
