Green Beans and Sausage
  • Ingredients
  • 1-1/2 pounds chicken and ham sausage
  • with horseradish, cut into
  • 1-inch lengths (page 90)
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 1/2 cup celery, chopped
  • 1-1/2 cups tomatoes, quartered
  • 2 pounds green beans
  • 8 small new potatoes
  • 1/2 cup water
Directions
  1. Saute sausage, onion, pepper and celery until lightly browned
  2. Pour off some of the fat from the sausages
  3. Add tomatoes, green beans, potatoes and water
  4. Cover the pan and simmer for forty-five minutes
  5. Serve hot.
