In a large non-stick skillet, heat the oil until hot
but not smoking over medium heat
Add the
onion and garlic and cook, stirring frequently,
until the onion is softened, about 7 minutes
Stir
in the carrots and cook, stirring frequently, until
the carrots are well coated, about 2 minutes
Add the sausage and cook, stirring frequently,
until the sausage is slightly brown, about 4
minutes.
Stir in the curry powder, ginger, cinnamon, salt,
cayenne, allspice, and black pepper and cook,
stirring constantly, until the mixture is fragrant,
about 1 minute
Stir in the yellow squash,
zucchini, broth, and 1/2 cup of water and bring
to a boil
Add the couscous and cook, stirring
frequently, until the liquid is absorbed and the
sausage is cooked through, about 7 minutes
