Cilantro-Lime Marinade
Cilantro-Lime Marinade
Ingredients
1 /4 cup dry vermouth or dry white wine
2 tablespoons fresh lime juice
1 tablespoon soy sauce
1 tablespoon olive oil
1 tablespoon minced fresh cilantro
1/4 teaspoon lemon pepper
1 /4 teaspoon salt
Directions
Place vermouth, lime juice, soy sauce and olive oil in a small bowl
Whisk to combine
Stir in cilantro, lemon pepper and salt. Yield: 1/2 cup SUGGESTED USE: This intense yet simple marinade is perfect for firm fish fillets
Try it with swordfish, halibut or shark steaks (1 to 2 hours)
After marinating, drain the marinade into a small saucepan and boil for 3 minutes
Serve it drizzled over the fish for added flavor.
