Cilantro-Lime Marinade
  • Ingredients
  • 1 /4 cup dry vermouth or dry white wine
  • 2 tablespoons fresh lime juice
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 tablespoon minced fresh cilantro
  • 1/4 teaspoon lemon pepper
  • 1 /4 teaspoon salt
Directions
  1. Place vermouth, lime juice, soy sauce and olive oil in a small bowl
  2. Whisk to combine
  3. Stir in cilantro, lemon pepper and salt. Yield: 1/2 cup SUGGESTED USE: This intense yet simple marinade is perfect for firm fish fillets
  4. Try it with swordfish, halibut or shark steaks (1 to 2 hours)
  5. After marinating, drain the marinade into a small saucepan and boil for 3 minutes
  6. Serve it drizzled over the fish for added flavor.
