CUBAN MOJO VEGETABLE BURRITOS
  • Ingredients
  • 1 (4 x 6 inch) piece banana squash, cut into 1-inch cubes
  • 2 zucchini, cut into 1-inch cubes
  • 1 small red bell pepper, cut into 1-inch cubes
  • 2 green onions, sliced
  • 1 serrano chili, minced
  • 2 cloves garlic, minced
  • 3 tablespoons fresh orange juice
  • 3 tablespoons fresh lime juice
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 4 small flour tortillas
  • 2 (14 x 12 inch) sheets heavy-duty aluminum foil
Directions
  1. Lay the squash, zucchini and red bell pepper on one sheet of foil
  2. Sprinkle evenly with the green onions, chili and garlic
  3. Stir together the orange juice, lime juice, cumin and salt
  4. Drizzle over the vegetables. Top the second sheet of foil and fold edges over three times to seal the foil packet
  5. Rotate in the flat standard basket for 15 minutes
  6. Place the tortillas in the warming tray while the vegetables cook. Open the foil packet and spoon vegetables on the tortillas, wrap up and serve.
