APRICOT BAKED APPLES
  • Ingredients
  • 2 large apples
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons apricot spreadable fruit
  • 2 tablespoons chopped dried apricots
  • 1 tablespoon finely chopped walnuts
  • 2 (14 x 12) inch sheets heavy-duty aluminum foil
Directions
  1. Cut each apple in half lengthwise and remove the core
  2. You may peel the apple or not
  3. Lay the apples, cut side up on one sheet of foil
  4. Drizzle with lemon juice
  5. Divide the jam evenly between the apples, spreading it on the cut surface
  6. Sprinkle with dried apricots and walnuts. Top with second sheet of foil and fold edges over three times to seal the foil packet
  7. Rotate in the Flat Standard Basket for 30 minutes or until apples are tender
  8. Open packet and serve apples with any juices.
