Smoky Salsa Marinade
Ingredients
1 cup smoky salsa with chipotles
3 tablespoons brown sugar
1 tablespoon Dijon mustard
Directions
Place salsa, brown sugar and mustard in a medium bowl
Stir to combine well. Yield: 1-1/4 cups SUGGESTED USE: Chipotle chilies are smoked jalapenos
There are several varieties of commercial salsa making use of these chilies
You can usually find one variety in the supermarket
If not, use a salsa of your choice and add a drop or two of liquid smoke
Use this mixture to marinade boneless chicken breasts (2 hours)
As the chicken cooks, use the remaining sauce for basting.
