To make the rub, toss the paprika, cumin, chili powder, sugar,
garlic powder, salt, cayenne and pepper together in a small bowl
Remove the skin from the breasts and rub about one tablespoon
of the seasoning all over each piece of chicken.
Spray the chicken lightly with the olive oil cooking spray
Rotate
the chicken in the Flat Standard Basket for 45 minutes or until
lightly browned and cooked through.
Tip: Any leftover chicken is delicious when shredded and added to
a salad or wrapped in a tortilla with lettuce and tomato.
