LEMON GARLIC CHICKEN WITH BLOND BBQ SAUCE
  • Ingredients
  • 4 chicken drumsticks (about 1 pound)
  • 4 chicken thighs (about 1 pound)
  • 1/3 cup fresh lemon juice
  • 3 tablespoons Dijon mustard
  • 1/4 teaspoon garlic powder
  • 2 tablespoons light mayonnaise
  • 2 tablespoons barbecue sauce
  • 1 teaspoon chili powder
  • 1/4 teaspoon paprika
  • 3/4 cup Italian seasoned bread crumbs
  • 1/4 cup freshly grated Parmesan cheese
Directions
  1. Remove skin and trim excess fat from chicken pieces
  2. Combine lemon juice, mustard and garlic powder in a large bowl
  3. Remove 2 tablespoons and reserve
  4. Add chicken to large bowl, turning to coat
  5. Cover and refrigerate 30 minutes. Combine reserved 2 tablespoons lemon mixture with mayonnaise, barbecue sauce, chili powder and paprika
  6. Cover and chill. Combine bread crumbs and Parmesan
  7. Remove chicken from bowl and dredge in crumbs
  8. Rotate in the Flat Standard Basket for 45 to 50 minutes or until cooked through
  9. Serve with sauce.
