CHICKEN WITH LEMON AND FRESH HERBS
  • Ingredients
  • 2 teaspoons grated lemon zest
  • 1/2 cup fresh lemon juice
  • 2 tablespoons olive oil
  • 2 tablespoons water
  • 1/4 cup minced fresh basil
  • 2 teaspoons minced fresh thyme
  • 1 teaspoon minced fresh rosemary
  • 1/4 teaspoon freshly ground pepper
  • 2 cloves garlic, minced
  • 6 (6 ounce) chicken breast halves, skin removed
Directions
  1. Combine the lemon zest and juice, olive oil, water, basil, thyme, rosemary, pepper and garlic in a shallow dish
  2. Wash and pat dry the chicken and add to the marinade, turning to coat well
  3. Cover and refrigerate up to 6 hours. Remove chicken from marinade and rotate in the Flat Standard Basket for 45 minutes or until chicken is cooked through and browned.
