CAJUN RUBBED CHICKEN BREASTS
Ingredients
1 tablespoon paprika
1-1/2 teaspoons garlic powder
1 teaspoon dried thyme, finely crumbled
1/4 teaspoon dried oregano, finely crumbled
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
Vegetable cooking spray
4 (6 ounce) chicken breast halves, skin removed
1 (14-1/2 ounce) can Cajun-style stewed tomatoes,
undrained
Directions
In a small bowl combine the paprika, garlic powder, thyme, oregano, cayenne, salt and pepper; stir well
Wash and pat dry chicken and spray with vegetable cooking spray
Then coat with spice rub. Rotate in the Flat Standard Basket for 45 minutes or until chicken is cooked through
While chicken is cooking, pour the stewed tomatoes into the Warming Tray and cover
Serve chicken topped with a spoonful of tomatoes and juices.
