SKINNY BUFFALO CHICKEN DRUMMETTES
  • Ingredients
  • 1/2 cup low-sodium chicken broth
  • 1 tablespoon paprika
  • 2 tablespoons fresh lime juice
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon honey
  • 1 teaspoon vegetable oil
  • 1/2 teaspoon salt
  • 1 /4 teaspoon hot sauce
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon black pepper
  • BLUE CHEESE DIP:
  • 1/3 cup low-fat mayonnaise
  • 2 tablespoons minced onion
  • 2 tablespoons nonfat buttermilk
  • 1 clove garlic, minced
  • 1 tablespoon vinegar
  • 1 ounce Blue cheese, crumbled
  • 1 tablespoon minced fresh parsley
  • 1/8 teaspoon freshly ground pepper
  • Dash of hot sauce
  • 24 chicken drummettes (about 2 pounds), skinned
Directions
  1. Combine the marinade ingredients in a large bowl
  2. Add the drummettes
  3. Cover and refrigerate 12 hours. Rotate the chicken in the Flat Standard Basket for 45 minutes
  4. Arrange on a platter and serve with Blue Cheese Dip. To make the Blue Cheese Dip, combine all ingredients in blender or food processor; process until smooth.
