TROPICAL CHICKEN BROCHETTES
  • Ingredients
  • 1/3 cup fresh lime juice
  • 1 tablespoon vegetable oil
  • 1 tablespoon honey
  • 6 (4 ounce) skinless boneless chicken breast halves
  • 12 canned, or frozen and thawed, pearl onions
  • 1 red bell pepper, cut into 2-inch pieces
  • 1 papaya, peeled, seeded and cut into 2-inch pieces
  • 1 -1 /2 cups fresh pineapple chunks
Directions
  1. Combine lime juice, oil, and honey in a shallow dish
  2. Cut chicken into 1-1/2 inch cubes and add to marinade
  3. Cover and refrigerate 8 hours, stirring occasionally. Remove chicken from marinade, reserving marinade
  4. Alternate chicken, onion, pepper, papaya and pineapple on kebob skewers
  5. Rotate for 25 minutes or until chicken is cooked through, basting with reserved marinade toward the end of the time.
