LIGHT & CRUSTY CHICKEN DIJON
  • Ingredients
  • 4 (4 ounce) skinless boneless chicken breast halves
  • 1 /3 cup fine dry bread crumbs
  • 1 tablespoon freshly grated Parmesan cheese
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon freshly ground pepper
  • 2 tablespoons creamy mustard-mayonnaise blend
Directions
  1. Wash and pat dry chicken breasts
  2. Trim chicken and pound to an even thickness of 1/2 inch. Toss the bread crumbs, Parmesan, thyme and pepper together in a shallow dish
  3. Brush mustard blend evenly over both sides of the chicken
  4. Dredge chicken, coating well, in the bread crumbs
  5. Rotate in the Flat Standard Basket for 20 minutes or until chicken is cooked through.
