SOUTHWESTERN CHICKEN WITH ZUCCHINI-CORN RELISH
  • Ingredients
  • ZUCCHINI-CORN RELISH:
  • 2 large zucchini, coarsely grated
  • 1 cup frozen corn, thawed
  • 1 /2 cup cider or white wine vinegar
  • 2 tablespoons vegetable oil
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon celery seed
  • RUB:
  • 1 tablespoon paprika
  • 1/8 teaspoon ground cumin
  • 1/8 teaspoon dried oregano
  • 1/8 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lime juice
  • 4 (4 ounce) boneless skinless chicken breast halves
Directions
  1. Combine all relish ingredients in a medium bowl
  2. Cover and refrigerate 2 hours or longer. Combine all rub ingredients together in a small bowl to form a paste. Trim chicken breasts and pound to an even 1/2-inch thickness
  3. Rub paste all over chicken breasts, cover and refrigerate for 1 to 2 hours. Rotate in the Flat Standard Basket for 20 minutes or until cooked through
  4. Serve chicken with drained Relish.
