Basil Balsamic Marinade
Basil Balsamic Marinade
Ingredients
1/2 cup balsamic vinegar
1/4 cup fresh lemon juice
1 teaspoon grated lemon rind (zest)
2/3 cup olive oil
2 cloves garlic, minced
1 /4 cup chopped parsley
1 /4 cup chopped fresh basil
1 teaspoon dried oregano
1 /2 teaspoon salt
1 /4 teaspoon freshly ground pepper
Directions
Place the vinegar, lemon juice and zest in a medium bowl
Slowly whisk in the olive oil
Stir in the garlic, parsley, basil, oregano, salt and pepper. Yield: 2 cups SUGGESTED USE: This marinade is a very strong vinaigrette in disguise
Besides using it to flavor seafood (1 hour) and boneless chicken breasts (2 to 3 hours) try this as a marinade for mozzarella or goat cheese.
