Basil Balsamic Marinade
  • Ingredients
  • 1/2 cup balsamic vinegar
  • 1/4 cup fresh lemon juice
  • 1 teaspoon grated lemon rind (zest)
  • 2/3 cup olive oil
  • 2 cloves garlic, minced
  • 1 /4 cup chopped parsley
  • 1 /4 cup chopped fresh basil
  • 1 teaspoon dried oregano
  • 1 /2 teaspoon salt
  • 1 /4 teaspoon freshly ground pepper
Directions
  1. Place the vinegar, lemon juice and zest in a medium bowl
  2. Slowly whisk in the olive oil
  3. Stir in the garlic, parsley, basil, oregano, salt and pepper. Yield: 2 cups SUGGESTED USE: This marinade is a very strong vinaigrette in disguise
  4. Besides using it to flavor seafood (1 hour) and boneless chicken breasts (2 to 3 hours) try this as a marinade for mozzarella or goat cheese.
