TURKEY TENDERLOINS WITH ONION-ORANGE SAUCE
  • Ingredients
  • 2 tablespoons Dijon mustard, divided use
  • 2-1/2 teaspoons olive oil, divided use
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon minced lemon zest
  • 1 /2 teaspoon dried tarragon
  • 2 cloves garlic, minced
  • 1 (1 pound) bag frozen pearl onions, thawed
  • 2 1/2-pound turkey tenderloins
  • 1/2 cup chicken broth
  • 3 tablespoons frozen orange juice concentrate
Directions
  1. Combine 4 teaspoons mustard, 2 teaspoons olive oil, lemon juice and zest, and tarragon and garlic in a small bowl
  2. Brush mustard mixture over turkey tenderloins and rotate in the Flat Standard Basket for 45 minutes or until cooked through and browned. Meanwhile, heat remaining 1/2 teaspoon oil in a medium skillet over medium heat
  3. Add the thawed onions and saute 4 minutes or until lightly browned
  4. Add chicken broth and simmer until onions are tender
  5. Add orange juice concentrate and remaining 2 teaspoons mustard; stir well
  6. Slice turkey into 1/4-inch slices and serve with sauce.
